Extraction previews don't seem to be working, shown on two machines so far. I don't see any errors in the log, just previews aren't showing up despite having Enable preview checkbox checked, status shows "Waiting for preview..."

Previews during conversion seem to be fine.

My previews seem to work fine in testing,

Can you post the output of "Generate" (rather than "Extract") from the GUI, so I can test your explicit set up?
